Culinary Arts 1 (9, 10, 11, 12)
Semester, 1/2 Cr. Pre-requisite: None Course Description: Introduction to food preparation and nutrition. Meal planning, purchasing, recipe cost control and culinary career exploration. Students will work individually and in teams to apply industry standards common in food service. Topics covered include: Kitchen Sanitation, Equipment, Knife Skills, Standard Kitchen Foods, and Basic Cooking Methods of all food groups. Assessments: Weekly Food Labs, Projects, Costing Out Recipes, Assignments, Exams. **College Credit: Optional 4 college credits will be offered to 10th, 11th and 12th graders upon completion of two (2) culinary courses and payment to Suffolk County Community College Excelsior Program.
